My family really enjoys barbecue, and this is an easy way for us to make it. Our friend with the massive smoker is sure to make fun of us for using a crock pot, but we like the way it turns out - and I don't constantly have to check on the meat! :D
I'll add the coleslaw recipe tomorrow.
Pulled Pork
4 lb pork loin
¼ cup apple cider vinegar
Salt and pepper to taste
Put pork loin in crock pot with apple cider vinegar, salt and pepper. Cook on low for about 8 hours. When done, drain liquid, remove fat and then pull apart meat. Works best to use a large fork or tongs. Eat plain or top with gluten free barbecue sauce. (I like Maull's.) Tastes good on top of a baked potato.
